CherryActive Ice-Cream

CherryActive Ice-CreamIngredients

  • 100g CherryActive dried cherries
  • 50ml CherryActive Concentrate
  • 300ml double cream300ml milk
  • 6 egg yolks
  • 175g caster sugar

Method

  1. Leave CherryActive cherries to soak in the CherryActive Concentrate while you make the ice-cream.
  2. Mix together the milk and cream in a pan then bring to the boil.
  3. While they are heating whisk together the egg yolks and sugar until they are pale and light.
  4. Pour in the cream, whisking all the time, then transfer back to the pan and cook for another five minutes, stirring constantly. Pour into a bowl and leave to cool.
  5. Place in an ice-cream maker and churn until nearly set. Gently stir in the soaked cherries and concentrate. Then freeze.

CherryActive Stuffing

CherryActive StuffingServes 4-6

Ingredients

  • 1 tbsp coconut oil or olive oil
  • 4 spring onions, sliced
  • 1/2 red pepper, deseeded and diced
  • 75g (2 3/4 oz) mushrooms, diced
  • 175g (6 oz) wholemeal bread
  • 1 egg, beaten
  • 25g (1 oz) pecan nuts, chopped
  • 75g (2 3/4 oz) CherryActive Cherries
  • 1 tbsp CherryActive Concentrate
  • 1/2 tbsp freshly chopped parsley
  • 1/2 tbsp freshly chopped thyme

Method

  1. Preheat the oven to 200°C/400°F/Gas mark 6. Lightly grease an ovenproof dish.
  2. Heat the coconut or olive oil in a frying pan and sauté the spring onion, red pepper and mushrooms for 5-6 minutes, until starting to soften.
  3. Grate the bread into crumbs, leaving some fairly chunky. Place in a bowl with the sautéed vegetables.
  4. Mix in the beaten egg, pecan nuts, CherryActive cherries and concentrate, and fresh herbs.
  5. Season well, spoon into the prepared baking dish and cover with foil.
    Bake for 15 minutes before removing the foil and baking for a further 10 minutes.

CherryActive Ginger Baked Apples

CherryActive Ginger Baked ApplesIngredients

  • 4 cooking apples, cored
  • 3 knobs of stem ginger, diced
  • 2 tbsp of stem ginger syrup
  • 140g CherryActive dried cherries
  • 45g walnuts
  • 1 tbsp freshly chopped mint leaves
  • 2 tbsp honey

Method

  1. Preheat the oven to 180C/350F/Gas mark 4.
  2. Place the cored apples into an ovenproof dish.
  3. Mix together the ginger, dried cherries, walnuts and mint then stuff the mixture into the holes of the cored apples, sprinkling the remainder around the apples.
  4. Pour the stem ginger syrup and the honey over the apples then cover with foil and bake for 45 minutes, or until tender.

Chocolate CherryActive Truffles

Chocolate CherryActive TrufflesMakes 10-12

Ingredients

  • 225g (8 oz) ginger cake
  • 110g (3 1/3 oz) dark chocolate
  • 75g (2 3/4 oz) CherryActive cherries, chopped
  • 1 tbsp CherryActive concentrate
  • 2 tbsp cocoa powder

Method

  1. Gently melt the chocolate in a bowl over a pan of simmering water.
    Crumble the ginger cake into a large. Add the CherryActive cherries and concentrate.
  2. Pour in the melted chocolate and mix it all together well with a fork – it will all come together to form a stiff mixture.
  3. Scoop out a teaspoon of the mixture and using the palms of your hands, shape into balls.
  4. Sift the cocoa powder onto a plate or tray and roll ht chocolate truffles in this to coat them.

CherryActive Breakfast Smoothie

CherryActive Breakfast SmoothieServes 1

Ingredients

  • 40g (1 1/2 oz) rolled oats
  • 2 tbsp CherryActive concentrate
  • 1 tbsp omega oil blend
  • 1 tbsp peanut butter
  • 20g (3/4 oz) chocolate flavoured whey protein powder
  • 250ml milk or water

Method

  1. Place all the ingredients into a blender and blend until smooth.

CherryActive Muesli

CherryActive Muesli Serves 4

Ingredients

  • 50g pumpkin seeds
  • 75g CherryActive Cherries
  • 25g walnut pieces
  • 15g desiccated coconut
  • milk to serve

Method

  1. Mix all the dry ingredients together in a large bowl.  Spoon into an airtight container or jar until ready to serve
  2. Serve with milk or apple juice. To aid digestion further, soaking overnight in apple juice will help to breakdown the food more.

CherryActive and Almond Muffins

CherryActive and Almond MuffinsMakes 10

Ingredients

  • 250g wholemeal self-raising flour
  • 140g soft brown sugar
  • 100g CherryActive Cherries
  • 35g flaked almonds
  • 100ml milk
  • 1 egg, beaten
  • 100g coconut oil, melted

Method

  1. Preheat the oven to 180°C/360°F/Gas mark 5. Place paper cases into a muffin tray
  2. Sift the flour into a large bowl and stir in the sugar, cherries and flaked almonds
  3. Mix together the milk, beaten egg and melted coconut oil
  4. Make a well in the centre of the dry ingredients and pour in the milk mixture. Mix gently but do not over-mix
  5. Spoon the mixture into the paper cases and bake for 20 minutes until golden
  6. Cool on a rack.

CherryActive Macerated Fruits with Mascarpone

CherryActive Macerated Fruits with MascarponeIngredients

  • 500g mixed berries e.g. strawberries, bayberries, blue-berries raspberries etc.
    (alternatively, this works well with a bag of mixed frozen berries if fresh are out of season)
  • 50g castor sugar
  • 300g mascarpone cheese
  • 100 ml CherryActive Concentrate
  • 2 fresh free range eggs whites
  • Sprig of mint and icing sugar to dust

Method

  1. place the berries, CherryActive and sugar into a  bowl and marinate for 10 - 15 mins
  2. meanwhile, whisk the egg whites in a clean bowl until light and firm peaks are achieved
  3. In a separate bowl beat the mascarpone and fold in the egg white
  4. chill 4 long presentation serving glasses and spoon a selection of CherryActive macerated fruits into the base and, top with mascarpone  repeat this process by adding more CherryActive macerated fruits on top of the mascarpone followed by another dollop of mascarpone if possible repeat this process 3 or 4 times until an attractive alternating layer has been formed
  5. top the layer off with a sprig of mint and dusting of icing sugar

CherryActive Ice Lollies

CherryActive Ice LolliesThis recipe provides an all natural and great tasting healthy treat for all the family. The preparation is simple and fun!

Ingredients

  • CherryActive Concentrate
  • Fresh Lemon / Lime juice / Orange juice
  • Water

Method

  1. Mix CherryActive Concentrate with water in the ratio of 1-4
  2. Add a twist of your chosen citrus fruit juice
  3. Pour into Ice Lolly moulds and insert stick
  4. Place carefully in freezer until fully set (over night is best)
  5. Enjoy!

CherryActive Fruit Blast SmoothieEnjoy a healthy treat with this all-natural smoothie!  Packed full of goodness, this smoothie will boost your antioxidant intake and give you that healthy inside feeling!

Ingredients

  • 1 x medium Banana
  • ½ Mango
  • 250ml Fresh Apple Juice
  • 20-30ml CherryActive Concentrate
  • Ice cubes

Method

  1. Place all of the ingredients together and blend until smooth. Serve and enjoy!
