What are Antioxidants?
Antioxidants are substances, compounds, or nutrients in our foods which can prevent or slow oxidative damage to our bodies. When our cells use oxygen, they naturally produce “free radicals”, which are chemicals that form naturally inside the body through the process of oxidation. Everyday functions such as breathing, digestion and physical activity produce free radicals. Daily exposure to polluted air, fried or over-cooked food and oxidizing radiation, from the sun and electrical appliances, contribute additional free radicals in the body.
These free radicals travel throughout our bodies, causing damage to our cells, organs and the body’s delicate chemical balance. Extensive damage by free radicals is thought to be a factor in the signs and diseases associated with ageing - including ageing skin, cancers, heart disease, stroke, brain deterioration, arthritis and other conditions. Antioxidants quench, or neutralise, these free radicals, thus preventing, or slowing down, the damage they can cause. Therefore, scientists recommend us to maintain a high antioxidant defence to help slow down the ageing process and to maintain good health.
What is Free Radical?
Simply put, a free radical is a molecule with a missing electron, which can cause serious damage to our body’s cells. An antioxidant may donate one of its electrons to the free radical. If no antioxidants are present, a free radical takes an electron from vital cell structures, damaging the cell and eventually leading to disease.

What Antioxidants are in Montmorency Cherries?
Montmorency cherries contain a complex variety of powerful antioxidants, including:
- Anthocyanins – these powerful antioxidant compounds, which give the fruit its bright red hue, are known to have powerful anti-inflammatory qualities
- Melatonin – this is one of the most potent antioxidants discovered. Melatonin is a powerful anti-cancer agent, has anti-inflammatory properties and also controls daily circadian rhythms, helping to maintain healthy sleep patterns. Montmorency cherries contain significantly high levels of Melatonin
- Super Oxide Dismutase (SOD) - a powerful enzyme and cellular antioxidant, SOD acts as a super scavenger of superoxide anions by ferreting out and destroying them throughout the body. The human body is often lacking SOD, thus the burden of defence often relies on intake of exogenous dietary antioxidants. Very few natural foods contain SOD
- Other Antioxidant Compounds - Montmorency cherries are rich sources of other phenolic compounds, such as ellagic acid, gallic acid, p-coumaric acid, kaempferol, and quercetin, all of which are potent antioxidants.
- Flavonoids - Six major flavonoids in Montmorency cherries were identified by the Brunswick Laboratories. They are chlorogenic acid, neochlorogenic acid, coumaroylquinic acid, rutin-glucoside, rutin and isorhamnetin-3-rutinoside. All these flavonoid compounds are powerful antioxidants
ORAC Values
Oxygen Radical Absorbance Capacity, or ORAC, measures the total antioxidant capacity of foods. ORAC measures how many oxygen radicals a specific food can absorb and deactivate (Ou 2001). The higher the ORAC score, the better a food may be in helping our bodies defend theselves against free radical damage and the diseases associated with ageing.
